According to your log, Extract full text articles is disabled.

In General Settings, the Extract full text articles is indeed, enabled in all three cases: "In order to use this method, just select the “Use Full-Text RSS script” in the “Extract full text articles” drop-down menu." ... We've now gone to each specific feed and Enabled: "Extract full-text articles [Use Full-Text RSS script". Is this correct?

Our General Settings alreay match those stated in the section you mention above.
We've now gone to each specific feed and Enabled: "Extract full-text articles [Use Full-Text RSS script".
Is this correct?

Yes, it is. Didn't you check it?
There is no Extract-full text articles option in the General Settings. I think you are confusing it with the Full text extractor URL setting field.

Followed the update instructions precisely. Re enabled "Extract full-text articles [Use Full-Text RSS script" and same error result below;

- Clear the Full text extractor URL field (make it blank).
- Save the settings.
- Click the "Install the Full Text RSS script" button at the bottom of the same page.
